Its REALLY Our Coffee!

At Timor Mountain we not only roast, package and market the coffee we sell, we’re also the producer at origin.

Just to ensure there is no misunderstanding we have a big hardworking team lead by Rogerio Brites and Romario Evangelista, together with an admin office led by Novella Da Costa.

They collect the harvest, process the cherry, dry the parchment, mill and bag up the green bean and stuff it in a container at Dili Port and send it to USA, Japan, Taiwan, Australia (or anywhere else that wants our fine coffees!).

Theres a big difference between the taste of commodity coffee (think ‘cheap coffee’ - because (surprise surprise) you get what you pay for) and speciality coffee. This difference starts with farmers who do the hard work of farming and supplying hand selected full ripe red coffee cherry.

At Timor Mountain we worked wth about 1,500 farmers in 2022 who supplied the quality red cherry, each one containing two little seeds we call ‘coffee beans’, that hopefully made the cup of coffee you’re going to drink tomorrow morning.

At our high elevation wet mills (the views re stunning) we select one of three processing methods (washed, natural process or honey process) and the beans are meticulously processed.

Each day lot (the cherry purchased on any day) is tracked through the system and the export lots ‘cupped’ to evaluate and certify that they have each achieved true speciality quality according to the standards of the Speciality Coffee Association.

The Timor Mountain Difference

So what? you might ask. What difference does this make? A few:

  • Our very best coffees are reserved for Timor Mountains own brand of roasted coffees.

  • our speciality coffee is better value - because we’re vertically integrated we cut out a bunch of middle men and inefficiencies.

  • You can enjoy your morning espresso or pour-over knowing that the coffee company that you bought the roast beans from is properly rewarding the farmers who do the hard work and is partnering with them to transform their livelihoods.

Oh yeah, one final thing … If you wake up one morning, have a sip of your fine Timorese Speciality Coffee and are struck with a sudden urge to fly to Timor-Leste, drive for five hours (up a very bad road) until you arrive at a stunningly picturesque coffee mill where amazing coffee is being made - you know exactly who to call.
